Nellie’s Mission

Exceed customer expectations with the best tasting, highest quality, humanely and sustainably produced eggs available.

At Nellie’s Free Range Eggs, their family has been farming for four generations. They are totally committed—okay, a little obsessed—with bringing you the highest-quality, safest, and freshest eggs possible. They are a values-led company, dedicated to the humane treatment of animals and small family farms, who they believe are the best stewards of environmental sustainability.

All their eggs come from small family farms like their own home farm. These are real farms, not imposters who slap a “farm-fresh” label on a factory-farm-produced egg. As the nation’s first Certified Humane® egg producer since 2003, they require that their farmers follow the strictest standards of humane animal treatment, safety, and environmental sustainability. But Nellie’s doesn’t really need to convince them. Just like Nellie’s, they think hens have a right to a reasonable life and that will make a better egg for you.

It’s not just good for their hens and our planet—it’s also good business. They stay vital and growing by recruiting other small family farms to supply them with eggs, not by mega-conglomerizing.

Yet they’re as efficient and productive as those factory-farm conglometrons, because they use cutting-edge production techniques and smart automation to process and distribute their eggs. In 2013, Nellie’s became America’s first egg producer to earn the “B-Corp Certified” designation as a For-Benefit Corporation, under the auspices of B-Labs.

They don’t need to “boost efficiency” by cramming their birds into inhumanely small spaces and then force feeding them antibiotics to keep them from spreading diseases to each other.

They promise to always provide you and your family with safe, wholesome eggs at a reasonable price. Check out their website and social media channels too. They are an amazing company and I love their eggs!

Meliss'a Broccoli, Ham & Swiss Quiche Recipe
The Perfect Recipe for Brunch, Lunch and/or Dinner ~ Perfect For The Holidays and Anytime!
Servings10
Prep Time20 minutes
Cook Time55 minutes
Ingredients
Instructions
  1. Pre-Heat Oven to 350 degrees.
  2. Steam the Broccoli Florets. Set Aside in a bowl and cover with foil or plastic wrap to keep fresh.
  3. Shred a block of Swiss Cheese I Use a good quality cheese as it makes all the difference in overall taste and texture. Once shredded... set aside. It needs to be 2 cups worth. I find a 9 or 10 ounce block to be plenty.
  4. Heat Deep Dish Pie Shells (8 to 10 minutes)
  5. While Pie Crusts are toasting, heat up your ham steaks in a saute pan until warm. Pull and dice into nice small bite size pieces.
  6. Using the same pan, melt the 2 tablespoons of butter and add the green onions, green pepper, garlic and a bit of salt and pepper to taste. Saute until veggies are soft and translucent and carmelized a bit.
  7. Now, beat 6 Nellie's Free Range Eggs slightly.
  8. Now, mix into the beaten egg mixture the can of evaporated milk, the can of cream of mushroom soup and then add the sauteed scallions, garlic and green pepper. Whisk well so that it is a creamy egg batter all mixed together.
  9. Now we will assemble to quiche. Take the two pie crusts that have been "toasted" and heated. Add in 1 cup of steamed Broccoli Florets, 1/2 Cup of Diced Ham, and Top with 1 Cup Of Shredded Swiss. It may seem really full but it is fine. Kind of press everything in to fit. (I had not added the cheese in this pic... but add one cup on top of each pie and spread around evenly... it will be a tight fit but it is perfect!)
  10. Now, take the egg batter mixture and divide evenly between the 2 Quiche's. Just pour slowly over the top and the mixture will absorb into the cheese and broccoli / ham mixture. I use a fork to poke the cheese/ham/broccoli mixture (while adding the egg mixture) until it is evenly divided and absorbed into both pies. It will look full but that is exactly what you want. Make sure you line your baking sheet with foil in the event of boil overs.
  11. Sprinkle with a bit of freshly ground pepper and place into the oven carefully (so you do not spill the egg mixture) into the oven at 350 degrees. Bake for 50 to 55 minutes.
  12. Take out of the oven and let rest for 5 to 10 minutes. Then slice into wedges (as large or small as you would like) and serve. This is great with fresh bread and a salad on the side!
Recipe Notes

You can also do bite size quiche bites with this recipe which are amazing! Some stores sell bite sized crusts that you can fill accordingly. You can also change the veggies and cheese to suit your needs BUT this is a delicious combination that everyone loves! Enjoy and Thank you to Nellie's Eggs for a delicious quiche made with the best eggs! The taste and texture is amazing using Nellie's Free Range Eggs and I LOVED it as well as my entire family of 7!
